I would have to say Pierre Gaignaire is my favorite chef in the world. Not only is his food amazing, his dining room perfect, his personality down to earth and friendly. His food is stupendously original. I didn’t see one dish which was an El Bulli knockoff, a Fat Duck copy, He is original. I have a feeling he is ahead of his time. His combinations and techniques although comfortable to me seem to be ahead of the worlds concepts of food pairings and texture profiles. I had lunch there in late 2004 and I will be returning to dinner there on November ?.......i can’t wait to enter that dining room again

My last visit there were 2000 Euros on display at the bar as one might display a bouquet of flowers. In itself that had an affect on me which weakened my knees!
