I would be remiss if I didn’t mention the Prince George Hotel right here in my home town of Halifax NS

It isn’t so much the hotel although it is run by an excellent management team led by Nicholas Carson arguably the best Hotelier in the business, ANYWHERE! The young Chef Ray Bear a good friend of mind there is cooking as good as anyone in the country right now. He is well read in culinary trends and extremely creative by nature. With a presence and physique of an Ultimate Fighting Challenge representative, he isn’t your typical looking chef. The guy has good hands! He can put a serious presentation together.
What I particularly like about his food is the constant changes in presentation styles. Oh he can stack food to but it can come in all forms from warm gelees to liquids to semi solids frozen what ever. The combinations work. Sasparella cured pork? Excellent. A sorbet made from a gingered chicken stock! Awesome. The guy is especially talented with seafood presentsations as he should be coming from the Maritimes. Ask him and he’ll tell you he has a talented team behind him, but with all due respect when you are driving them forward for 16 hours a day and have an insatiable appetite for better quality and new designs, you get results. Watch this guy when he opens his own place.
