Clearwater Lobster Cakes, with Lobster, Corn & Black Bean Salsa

Lobster Cakes

Nova Scotia Prime Lobster Meat
Potatoes, cooked & mashed
Green onions, chopped
Dill, fresh, chopped
Mayonnaise

Method:

Cook lobster in its' package in boiling water or by steam for 4 minutes & allow to cool in the bag 4 hours to 24 hours.  Dice lobster.  Cook potatoes in boiling, salted water until tender.  Drain.  Mash or pass through a ricer.  Combine all ingredients.  Form into uniform cakes approx. 225g each.  Chill in refrigerator for 2 hours.  Dredge cakes in flour, eggs and crumbs.  Pan fry, bake or deep fry.  Serve with a portion of salsa.

Lobster, Corn & Black Bean Salsa

Nova Scotia Prime Lobster Meat
Fresh tomatoes, seeded and diced small
Red and Yellow Bell Peppers, diced small
Green onions, sliced
Cilantro, chopped
Jalapeno, minced fine
Frozen corn kernels
Canned black beans, rinsed
Lime (juice and zest) (1/5 per one)
Oranges (juice and zest) (1/15 per one)
White sugar

Method:

Combine all ingredients for 2 hours minimum, 12 hours maximum.

Presentation:

Place lobster, corn & black bean salsa in cones, and in stand.  Plate 1 cake per person.

Serving:

Serve lobster cake with a portion of salsa on the side.
